1 packet of frozen spinach or 1 bunch of fresh spinach, cooked & drained, 1.5 sheets of shortcrust pastry, 1 packet of feta cheese, 6 eggs, 1 spring onion, 200ml light cream. salt & pepper to taste
Preheat oven to 180º Lightly oil a quiche pan Line pan with pastry Mix eggs & cream together and crunble the feta into the mixture Add onion and season with salt and pepper Pour mixture into the pan and place in oven for approx. 35 minutes or until quiche has risen and is a golden brown colour. Serve hot or cold with a salad
