3 or more large chicken breasts
2 bunches of broccoli
1 can cream of mushroom soup
1 can cream of chicken soup
1 c. mayonnaise
1 Tbsp. lemon juice
1 tsp. curry powder
1 c. cheddar cheese
1/2 c. bread crumbs

Directions:
Directions:
Boil chicken in salt water until done; drain. Let cool and then remove skin and bones from white meat. Break meat into bite-size pieces. Cut broccoli into bite size pieces and boil until tender. (Do not overcook.) Drain.

Mix in a bowl the soups, mayo, lemon juice, and curry powder. Grate cheese for topping. In a 9X13 pan, place broccoli pieces on bottom layer. Put the chicken pieces on top of the broccoli layer. Pour sauce smoothly over the chicken. Sprinkle grated cheese lightly over sauce and sprinkle bread crumbs lightly over cheese. Cover with foil. Bake at 350 for 40-50 minutes. Serve over rice.

I use boneless skinless breasts because they are easier. They just needed to be cooked and cut into bite size pieces for the 2nd layer.
