1 stick unsalted butter, softened
1 c. sour cream
1 large egg
1 tsp. vanilla
1/3 c. sugar
1 1/2 c. flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt

Preheat oven to 400. Greae a 12 cup muffin tin (or use paper liners).
Cream together butter, sugar, sour cream, egg, and vanilla. Add the rest of the dry ingredients and mix well together. These are wonderful plain, but you can take it up a notch by adding other goodies.

Options for Add-ins (get creative here)
- 1 chopped banana and 3/4 c. chocolate chips, or
- 1 c. sliced almonds, 3/4 c. dried cranberries, 1/4
tsp. almond extract or
- 1 can pineapple tidbits (drained), and 1 c.
cocoanut or
- 1 c. chopped dried apricots and 1 T. poppy seeds
- what ever creative combo you want to try!!!!

Bake for 20 minutes.
