1 cup chopped pecans
Cake:
1 pkg. Yellow cake mix (I use Duncan Hines)
1 small pkg. Vanilla instant pudding (I use French Vanilla when I can find it at the store)
4 lg. eggs
cup cold water
cup oil
cup Dark Rum
Glaze:
In a saucepan, melt:
lb. butter (1 stick)
cup water
1 cup sugar
Remove from heat and stir in:
cup Dark Rum

Preheat oven to 350 degrees. Grease and flour 10 tube pan or 12 cup Bundt pan (I use a bundt pan).
Sprinkle the pecans bottom of the pan. Mix together the cake mix, pudding, eggs, oil, water, and rum.
Bake 1 hour. Let cool in pan for 5-10 minutes. Using a metal skewer or long bamboo stick poke numerous holes in the cake while still in the pan.
For the glaze, melt the butter in a pan; add the sugar and the water and boil for 5 minutes, stirring constantly. Remove from heat and stir in rum. Slowly pour all the glaze mixture over the cake until it is absorbed.
Invert cake on serving plate and serve warm with vanilla ice cream!

I must admit, this cake has put me on the map with family and friends. It is vital part of each Holiday season. If I did not make this at Christmas my family would revolt! I use this as a gift item often--I buy vintage cake plates and put the cake on it. Makes a perfect hostess gift over the holidays!
