1/4 tsp. salt
1 tsp. rosemary, ground
4-5 skinless, boneless chicken breast halves
1/3 c. pomegranate juice
3 T. balsamic vinegar
2 tsp. sugar
2 tsp. canola oil
1/4 tsp. salt
1/4 tsp red pepper, crushed
mixed salad greens for 5
1/3 c red onion, finely diced
2 med oranges, sectioned
1/3 c dried cranberries
1/4 c pomegranate seeds (in season)
1/4 c feta or bleu cheese, crumbled
1/2 c walnut pieces

Directions:
Directions:
Spray large non-stick skillet with Pam, preheat over medium heat. Sprinkle rosemary and salt over chicken. Add chicken to pan, cook 5 minutes on each side or until done. Remove chicken from skillet, let stand 3 minutes. Cut chicken across grain into thin slices or chunks. Combine pomegranate juice, vinegar, sugar, oil, salt and red pepper. Shake or stir well. To serve, place greens on plate, add onion, oranges, cranberries, pomegranate seeds, walnuts, and cheese. Add dressing. Top with chicken.
