2 8-oz. pkgs. Cream cheese
1 Tbsp. vanilla
cup sugar
vanilla wafers
1 Tbsp. lemon juice
pie filling your choice
2 eggs

Directions:
Directions:
Preheat oven to 325. Beat cream cheese, sugar, lemon juice, eggs, and vanilla with electric mixer until fluffy. In muffin tins, use cupcake liners and put a vanilla wafer in the bottom of each liner. (I can get 18 cheese cakes using this recipe. If you need to make 24 cheese cakes, just increase the recipe by half -- i.e., 3 pkgs. cream cheese, etc.) Add cheese mixture.
Bake 30 min. Before serving, add spoonful of pie filling on top of cheese cake.

If you want to make these cheesecakes ahead of time, they can be frozen while still in the liners. When I am ready to serve, I take them out of the freezer, remove the liners while cheesecakes are still frozen, and let them thaw out (in the fridge). Then I add the pie filling to the top of each cheese cake.
