2 eggplants
1 egg
3 Tbsp water
1/2 C. wheat germ
1/4 C. olive oil
2C. Mozzarella. cheese
1/4 C. grated Parmesan cheese
1 large. jar of your favorite spaghetti sauce

Directions:
Directions:
Cut eggplant crosswise into 1/4 inch slices. Mix egg and water. Dip eggplant into egg mixture and then coat with wheat germ.
Heat oil in large skillet over medium heat. Cook 3-4 slices at a time turning once until lightly brown. Repeat with remaining eggplant.

Place 1/2 of the eggplant in an 9x 13 pan overlapping slightly. Spoon half of the sauce over eggplant and sprinkle with 1 C. cheese. Repeat second layer and sprinkle parm. cheese on top.

Cook uncovered at 350 degree until cheese is light brown. approx. 25 minutes. Let set 5 minutes before cutting.
