2 c of cooked sweet potatoes, mashed and drained
4 c sugar
2 tsp nutmeg
4 eggs separated into 4 yolks and 4 egg whites
3/4 c melted margarine
2 c milk
2 unbaked pie shells

Directions:
Directions:
Combine sugar and nutmeg. Mix with sweet potatoes and the 4 slightly beaten egg yolks. Blend in the margarine and milk. Beat the 4 egg whites until stiff. Fold them into the mixture. Pour into two unbaked pie shells. Bake for 19 min. at 400 degrees. Reduce heat to 200 degrees and continue baking for approximately one hour or until nice and brown.

Ray always loved the sweet potato pie they had at the Seymore family reunion when he was a boy. Aunt Ruth said this was the recipe.
