2 cans corn, drained
2 cans black beans, drained
1 can diced tomatoes with chilies
1 small bunch green onions, diced

Dressing:
1/3 c. vegetable oil (or olive oil)
1/3 c. lime juice
1 T. minced cilantro or parsley
1 t. salt
1 t. cumin

Directions:
Directions:
Mix 1st 4 ingredients together. In a separate bowl, mix dressing ingredients. Pour dressing over corn mixture. Cover and refrigerate until marinated.

This is delicious as a dip for tortilla chips or scoops. It can also be used as a side dish or southwest salad topping.
