3 cups sugar
4 eggs
1 cup oil
3 1/2 cups flour
2 teasp. soda
1/2 teasp. baking powder
1/2 teasp. salt
1 teasp. each ginger, cinnamon, nutmeg and cloves
2/3 cup water
2 cups canned pumpkin
1/2 cup chopped nuts (optional)

Directions:
Directions:
Mix sugar, oil and eggs. Sift dry ingredients. Add to egg mixture alternately with water. Stir in pumpkin and nuts. Pour into two greased and floured 9x5 bread pans. Bake at 350 about 1 hour or until a knife comes out clean.

This is also a great recipe for zucchini bread; just replace the pumpkin with grated zucchini.
