Bell peppers (red, yellow, orange, and green)
Asparagus
Zucchini
Yellow squash
Red onions
Tomatoes
Mushrooms

Directions:
Directions:
You can use any vegetables you desire. Slice or dice vegetables in a large ovenproof dish. Salt and pepper to taste, then drizzle extra-virgin olive oil over the top, just coating the vegetables. Cook in a hot oven, 425 until they are the consistency you like. We prefer crisp-tender so I cook them 15-20 min. You adjust the portions and the cooking time.
