1 lb. fully cooked ham
3 c. cooked rice
1 can cream of chicken soup
2 medium tomatoes, peeled and chopped
1 medium onion, chopped
1 medium green pepper, chopped
1 tsp. salt
1 c. chopped walnuts
1 lb. Gouda cheese or 1 lb. cheddar cheese

Directions:

Cut cheese into 1/4-inch thick slices to line bottom and sides of greased 3-quart casserole to within 1 inch of top. Reserve remaining cheese. Cut ham into 1-inch pieces. Mix ham, rice, soup, tomatoes, onion, green pepper and salt. Pour into casserole. Sprinkle with walnuts. Shred remaining cheese. Bake uncovered until hot and bubbly. Bake at 350 for 1 hour.
