1 10 oz. package frozen chopped spinach
1 beaten egg
1/2 c. sour cream
1/4 c. milk
2 tbsp. grated Parmesan cheese
2 tbsp. minced onion
1/2 tsp. salt
Dash pepper
2 c. shredded Monterey Jack cheese ( 8 oz.)
4 oz. spaghetti, cooked and drained (2 cups cooked)

Thaw and drain frozen spinach. Combine beaten egg, sour cream, milk, parmesan cheese, onion, salt and pepper. Add the drained spinach and spaghetti; mix well. Bake covered in a baking dish at 350 for 15 minutes. Uncover and bake 15-20 minutes more. Sprinkle top with parmesan if desired.
