1lb. sweet Italian sausage 1c. sweet onion 5c.beef broth 2 cloves garlic, chopped 1/2 c. water 1/2c dry red wine 2c whole tomatoes with liquid 1c sliced carrots 1/2 tsp. basil 1/8 tsp. oregano 8 oz. v8 juice 1 1/2 c zucchini 3T fresh parsley 1 med. pepper chopped 1 19oz. frozen tortellini
Cook sausage out of casing; drain off fat. Cook the onion until soft using the same pan. Combine sausage, onion, garlic, broth, water,wine, tomatoes, carrots, basil, oregano, v-8, zucchini, parsley and green pepper. Add the tortellini last, they get plump when cooked.
