3 T butter
2 T sugar
1/2 T cinnamon
1 apple, thinly sliced
3 eggs
3/4 cup flour
3/4 cup milk
1/2 tsp salt

Directions:
Directions:
Preheat oven to 400 F. Place 12" cast iron skillet in oven, let warm for five minutes. Add butter and when melted, coat all sides of skillet. In small bowl, mix sugar and cinnamon. Toss with apple slices. Arrange apples in pan, placing one slice in center and then placing others around the rest of the skillet.

Mix remaining ingredients and pour batter over apples. Bake uncovered for 20-25 minutes or until pancake is puffy and beginning to brown on sides.

Serves 4.
