6 egg yolks
6 egg whites
1 cup powdered sugar
1/4 tsp. salt
1 tsp. vanilla
2 tbs. cocoa

Directions:
Directions:
Beat whites very stiff. Beat yolks till tick and lemon colored. Sift sugar, salt, and cocoa together six times. (Sift onto waxed paper back and forth.) Add dry ingredients to yolks. Fold this mixture into whites. Grease jelly roll pan _well_ and flour. Spread mixture into jelly roll pan evenly. Bake 25 minutes at 375. (Be careful not to over bake. To tell when it is done, check to see if edges are dry.) Turn onto a towel. Fold over rolled-up brown bag so it won't fold up too tight, roll in towel to cool. Remove paper and fill with sweet whipped cream. Frost with chocolate frosting (thin*). Serves ~10. Can be frozen; thaw before serving.

*Thin chocolate glaze: 2 T. butter, 2 squares unsweetened chocolate, 1 c. powdered sugar, 2 T. boiling water. Melt butter and chocolate, stir in powdered sugar and water. Beat until smooth but not stiff.

Grandma used to use fresh cream from the local cow - so thick you'd have to spoon it into the mixer.
