3 chicken breasts
1/2 of red bell pepper sliced
1/2 of yellow bell pepper sliced
1 med onion sliced
1 cup of sliced fresh mushrooms
1 packet of McCormick Fajita seasoning
1 tbsp olive oil
1 cube of onion bouillon
1 cube of tomato bouillon with chicken flavor
1/4 cup of water

Directions:
Directions:
In 8 qt pot add the cubes of onion and tomato bouillon, 4 cups of water and bring to a boil. Add the chicken and boil until no longer pink in middle. About 15 - 20 min. Drain and set aside to cool.
In large skillet or wok; heat 1 tbsp of oil. Add onion, mushrooms and bell peppers; cook and stir 3 to 5 minutes.
Shredded chicken and return to skillet.
Stir in water and seasoning mix. Cook and stir 3 minutes or until heated through.
Spoon into warm tortillas.
Serve with toppings; if desired.

You can either slice the chicken before boiling or after boiled and cooled; shredded chicken.
Assorted Toppings: shredded cheese, salsa, sour cream, guacamole or sliced/diced tomatoes
