2-3 small zucchini (about 1 1/2" diameter)
1 egg
1/2 c. flour
14 saltine crackers, crushed
pepper- to taste (I use lemon pepper)

Directions:
Directions:
Heat deep fryer or 3/4 inch oil in frying pan (can use olive oil). Crush crackers and mix with flour and pepper in shallow container. Beat egg in shallow bowl. Wash zucchini and slice 1/4" pieces. Dip zucchini pieces in egg then in flour mixture and drop into hot oil. Fry until golden brown and remove to drain on paper towel.
