1 lb of ground beef - 80/20 fat
1 large yellow onion - finely chopped
1 medium green pepper - finely chopped
2 cloves of garlic - finely minced
1 small can of tomato sauce (Spanish Style) + 1 cup of water
2 tbsp. of Worcestershire Sauce
1 large potato, cubed and fried (or cubed and boiled) -
May be omitted
1 cup of raisins
1 cup of chopped pimento stuffed olives
1 cup of Red Wine
2 tbsp. of extra virgin olive oil
pinch of cumin (may be omitted) - salt & pepper to taste

In large skillet, over medium heat cook chopped onions and chopped green pepper in olive oil until onions are golden in color, then add minced garlic, pinch of cumin, olives and set aside. In a separate pot, brown ground beef until all pink color is gone, discard any rendered fat. Place browned meat in the onion/green pepper mixture, and add Worcestershire sauce, wine and tomato sauce. Cover and cook over low heat for about 15 minutes or until meat is thoroughly cooked, then add raisins and cubed fried potatoes. Adjust seasoning, adding salt and pepper to taste. Serve over white rice. Serves four to six.
