4&1/2 lbs. potatoes(about 12 medium)
9 slices Bacon diced&cooked
1&1/2 c chopped onion
3/4 c chopped celery
3 T flour
1T plus1 tsp salt
1&1/2 c water
1 c cider vinegar
1 c sugar
1/3 c snipped parsley

Directions:
Directions:
Fry bacon till crisp. Remove Cook onion and celery in fat.
Stir in flour and salt.Cook over low heat till bubbly. Stir in water ,vinegar and sugar. Stir in bacon and parsley.
slice potatoes and pour sauce over them,and heat all together.until potatoes are soft. Serve warm.
Make early so sauce soaks in potatoes
