1 cup long grain white rice
2 T peanut oil
4 chicken breasts cut into 1/2 inch chunks
2-3 green onions chopped
1/2 c fajita sauce (World Harbor Fajita sauce)
3 T creamy peanut butter
1 12 oz can crisp corn
1 15 oz can black beans (drained)
1 15 oz can red beans (drained)
1 14.5 oz can tomatoes undrained
hot pepper sauce - optional

Directions:
Directions:
cook rice
heat oil, add chicken saute in oil, add green onions
reduce heat to low
blend cooking sauce with peanut butter, drizzle over chicken and onions
add corn,beans and tomatoes , stir well , simmer longer to heat throughout. Add hot pepper sauce if desired
Spoon over rice
