Sour Cream Coffee Cake (Recipe needs to be cut in half)
1 cups sugar
3/4 cup margarine or butter, softened
3 eggs
1 tsp. vanilla
3 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1 cups sour cream


Brown sugar Filling - (do not cut in half)
1/2 cup packed brown sugar, cup finely chopped nuts (optional), 1 tsp. ground cinnamon. Mix all ingredients.

Heat oven to 350˚. Grease 1 loaf pan (9x5x3). Prepare the brown sugar filling; reserve. Beat sugar, margarine, eggs, and vanilla in large bowl on medium speed for 2 minutes, scraping bowl occasionally. Beat in flour, baking powder, baking soda & salt alternately with sour cream on low speed. Spread 1/2 of the batter in pan. Sprinkle with 1/2 of the filling. Repeat layers. Bake about 45 minutes, or until wooden toothpick inserted near center comes out clean. Cool slightly; remove from pan. Cool 10 minutes. Serves 8.
