2 c. cooked rice
1- 10 oz. can cream of mushroom soup
1 c. sour cream
1 med. onion, chopped
2 stalks celery, sliced
2 T. pimento, chopped
salt & pepper to taste
scant 1/4 c. margarine, melted
4 chicken breasts (skinless, boneless)
8 oz. evaporated milk
1/4 c. melted margarine

Directions:
Directions:
Mix rice, soup, onion, celery, pimento, salt, pepper, and margarine. Put in greased 9 x 13 pan. Mix evaporated milk and margarine. Dip chicken breasts in this mixture and place on top of rice. Cover with foil and bake for 1 hour at 350 degrees.

Freezes well; can cook before or after freezing. Also reheats well in microwave.
