1 3/4 c. flour, sifted
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 c. shortening
2/3 c. shortening
2 eggs, well beaten
1 c. mashed bananas (2-3 fully ripe bananas)

Directions:
Directions:
Preheat oven to 350. Sift flour, baking powder, baking soda, and salt together. Beat shortening until creamy with an electric mixer. Add sugar gradually and beat until light and fluffy. Add eggs and beat until well mixed. Mash bananas on a plate with a potato masher. Stir half of the mashed bananas into the creamed mixture. Beat in half of the sifted mixture. Add the rest of the bananas. Mix and stir in the rest of the flour mixture. Beat until mixture is smooth. Turn into well greased standard bread pan. Bake 50 min or until bread is done. (Smaller pans take less time if divided into 2 pans)
