3 eggs
1 3/4 cup bread flour
2 pinches salt

Directions:
Directions:
Beat eggs in a large bowl with a fork.
Mix in salt.
Add flour, one handful at a time, mixing well with each addition.
Knead for 15 minutes.
Wrap in waxed paper and let rest for 10 minutes.
Pass dough through a pasta machine
OR
Gently roll the dough out as thin as possible on a floured surface with rolling pin and cut into long, thin noodles with a sharp knife.
