1 lb. good sausage 1 16oz can kidney beans 2 cup canned tomatoes 2 cup water 1 small onion chopped 1 bay leaf 2 stalks celery chopped ¾ tsp. salt 1 clove crushed garlic (if desired) ½ tsp. thyme 2 cups diced potatoes ½ cup chopped green pepper dash pepper
Cook sausage and drain well. Combine kidney beans, tomatoes, water, onion, bay leaf, salt, garlic, thyme, and pepper. Add sausage: simmer 1 hour. Add potatoes, green pepper and celery. Cook 15 minutes.
