2 T. butter or margarine
3 eggs beaten well
1/2 cup all purpose flour
1/2 cup milk
1/4 t. salt

Directions:
Directions:
Preheat oven to 400. Put pie plate in oven and put the butter or margarine to melt (2 or 3 minutes). In a medium bowl, beat eggs well with a rotary beater or mixer. Add flour, salt and milk. Beat until smooth. Carefully, open oven and pull out center rack. Pour batter into pie pan. Bake 20 minutes or until puffed and well browned. DO NOT PEEK by opening the oven.

Divide into 6 wedges and use butter, powdered sugar, jelly or jam or flavored syrup as desired.

This is the first lab I do with students at East. They love the BIG pancake. I got the recipe from Linda Berg, good friend, Perkinette, former East Foods teacher, and state department of education.
