8 bacon slices, diced
1 - 4oz can mushrooms sliced or 1 ½ c. sliced fresh
½ c. diced celery
2 ¼ c. water
1 can (8 oz.) tomatoes
1 envelope (4 serving size) onion soup mix
1 ½ c. grated cheddar cheese
2 ¼ c. Minute Rice

Directions:
Directions:
Preheat oven to 375° F. Fry bacon until crisp. Drain all but 1 T. drippings. Add mushrooms and celery and sauté in reserved drippings until tender. Meanwhile, combine water, tomatoes, soup mix, and 1 c. of the grated cheese in a 1 ½ qt. casserole. Stir in bacon, sautéed mixture, and the rice. Cover & bake 15 min. or until rice is tender. Sprinkle with remaining cheese. Bake uncovered until cheese melts and is lightly browned. Makes about 5 c or 5 serv.
