1 c. butter, softened
c. sugar
c. packed brown sugar
1 egg
2 tsp. vanilla extract
1 c. cooked or canned pumpkin
2 c. all purpose flour
3 tsp. pumpkin pie spice
1 tsp. baking powder
1 tsp. baking soda
tsp. salt
1 pkg. (11 ounces) vanilla or white chips
1 c. chopped pecans
Penuche Frosting
c. packed brown sugar
3 T. butter
c. milk
1 to 2 c. confectioners sugar

1. In a mixing bowl, cream butter and sugars.
2. Beat in egg, vanilla and pumpkin.
3. Combine dry ingredients; gradually add to the creamed mixture.
4. Stir in chips and pecans. Drop by rounded teaspoons 2 in. apart onto ungreased baking sheets.
5. Bake at 350 for 12-14 min or until firm.
6. Remove to wire racks to cool.
7. For frosting, combine brown sugar and butter in a saucepan. Bring to a boil; cook over medium heat for 1 min or until slightly thickened. Cool for 10 min.
8. Add milk; beat until smooth.
10. Beat in enough confectioners sugar to reach desired consistency. Frost cookies. Yield: about 4 dozen.
