4 cups yellow squash 1 cup onion 1 cup grated carrot 1 stick butter, melted 1 can cream of mushroom soup 1 box stuffing mix
Combine squash, onion and grated carrot in pan. Cover with water and boil until squash is slightly tender. Drain. Mix melted butter with mushroom soup and blend into squash mixture. Bake for 30-40 minutes in 350º oven. Variation: add grated cheese, cooked sausage or hamburger meat.
