6 turkey bacon slices
2 med. onions, sliced
1 can mushroom soup
1/4 c. skim milk
5 hard boiled eggs, sliced
2 c. low - fat shredded cheddar cheese
Dash: salt & pepper
Whole Wheat English Muffins, toasted, split

Directions:
Directions:
1. Heat over to 350, Fry bacon until crisp, drain. Spray a skillet with cooking spray and saute' onion in pan.

2. Stir into that pan soup, milk, eggs, cheese and seasonings. Pour into 10 x 6" baking dish; top with crumbled bacon.
Bake @ 350 for 20 minutes. Serve over muffin halves.
