2 lbs beef stew meat, cubed
1 medium onion, chopped
2 stalks celery, chopped
1 lb bag mini carrots, cut if too large
6 small potatoes, peeled and cubed
3 Tbsp dry quick tapioca (comes in a box)
2 c. V8 juice

Directions:
Directions:
Place vegetables and meat in sprayed glass 13x9 pan. Sprinkle with salt and pepper. Combine juice and tapioca and pour over vegetables and meat. Cover tightly with foil. Bake at 250 degrees for 4-5 hours (or 325 for 2 1/2 - 3 hours)

Tip: You can adjust vegetable quantities to your liking.
