8 1/2 c. flour
1 tbsp. baking powder
1 tbsp. salt
2 tsp. cream of tartar
1 tsp. baking soda
1 1/2 c. instant nonfat dry milk
2 1/4 c. vegetable shortening

Directions:
Directions:
In a large bowl, sift together all dry ingredients. Blend well. With pastry blender, cut in shortening until evenly distributed. Mixture will resemble cornmeal in texture. Put in large airtight container. Store in a cool, dry place. Use within 10-12 weeks.

For rolled biscuits, combine 3 c. mix with 2/3 c. milk or water. Let dough stand 5 minutes. Knead about 15 times on lightly floured board. Roll 1/2 inch thick and cut as desired. Bake at 450 for 10-12 minutes (makes 12 large biscuits)

For drop biscuits, stir together 3 c. mix and 3/4 c. water or milk just until blended. Drop by tablespoonful onto baking sheet. Bake at 450 10-12 minutes.

For dumplings, stir together 3 c. mix and about 3/4 c. water to make a slightly sticky dough. Drop by spoonfuls into a large pot of simmering soup. Cover the pot and continue to simmer 10 minutes. Dumplings will thicken the broth. My family loves them.
