1 cup finely chopped sweet onion
2 T butter
1 pkg. (30 oz) frozen shredded hash browns, thawed
2 C shredded Swiss cheese
1 tsp salt
1/4 tsp pepper
2 eggs
1 C milk

Directions:
Directions:
Saute onion til tender. Combine potatoes, cheese, seasonings, and onions. Transfer to greased 13 by 9 baking dish. Whisk eggs and milk; pour over mixture. Bake uncovered at 350 degrees for 35-40 min or until edges begin to brown. Let stand few minutes before cutting. I often halve this recipe.
