6 oz Uncle Ben's long grain and wild rice mix
11 oz white corn
1 small cucumber, seeded and chopped
2 medium carrots grated
2 green onions with tops, chopped
1/2 c. fresh parsley, chopped

1/2 c. olive oil (or vegetable)
1/4 c. lemon juice
2 cloves garlic
1/2 tsp. dried dill weed
1/4 tsp. dry mustard
1/4 t. pepper

Cook rice to directions, no butter. Cool to room temperature and then stir add dressing immediately. (Do not let cooled rice sit without dressing). Stir in other ingredients. Chill.
