6 boneless, skinless chicken tenderloins, cut into 1 inch pieces
2 cans chicken broth
1 can kidney beans, undrained
1 c. salsa
1 c. frozen corn
1/2 c. instant rice
Toppings: shredded cheese, sour cream, chips, avacado, cilantro

Directions:
Directions:
In large saucepan, combine chicken, broth, beans, salsa and corn. Bring to a boil. Reduce heat and simmer uncovered 5-10 minutes, or until chicken is no longer pink. Stir in rice and simmer until cooked. Cover, remove from heat and let stand covered 5 minutes. Serve with toppings.

Can use rotisserie chicken or cooked chicken breasts.
