1 c. quick cooking oats (or regular)
1/2 c. milk
1 c. all purpose flour
2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. cinnamon
3/4 c. pure maple syrup
1/4 c. butter, melted
1 egg lightly beaten
1/2 c. chopped pecans (optional)

Grease 12 muffin cups or line with paper liners. In a medium bowl combine oats and milk, let stand 5 minutes. In a large bowl, combine flour, baking powder, salt, and cinnamon. Make a well in center of flour mixture, set aside.

Stir maple syrup, melted butter and egg into oats mixture. Add to dry ingredients. Stir just until moistened (batter should be lumpy). Fold half of pecans into batter.

Spoon batter into muffin cups, filling 2/3 full. Sprinkle with remaining nuts. Bake at 400 degrees for 15-18 minutes until tops are golden and toothpick inserted comes out clean. Cool in muffin cups on a wire rack for 10 minutes. We especially like these made in the muffin top pan. Best part of the muffin anyway!
