Vodka Lemon Chicken Recipe

1 thin sliced lemon
2tbsp olive oil
2 eggs
2tbsp milk
1/2c flour
4 boneless skinless chicken breasts
4tbsp citron vodka
5tbsp unsalted butter
4tbsp lemon juice
1/2tbsp cilantro
1tbsp chopped basil
salt & pepper

Directions:

Quickly char the lemon slices on both sides in a saute pan. Remove lemon and return pan to medium heat, add oil. Whisk the eggs and the milk together in a small bowl. Coat chicken in flour and then into egg batter. Cook the chicken in the pan somewhere around 8 minutes on each side. Set aside in a covered dish. Pour vodka into the pan and loosen the bits on the bottom of the pan. Add butter, lemon juice, cilantro, basil, salt and pepper. Cook until it reduces by about a quarter. Return chicken and lemon slices to pan and toss.
