1 pkg. sugar cookie mix
1/2-1 tsp. almond extract
1 small pkg. cheesecake OR white chocolate pudding mix

8 oz. cream cheese, softened
8 oz. cool whip
fresh fruit or canned mandarin oranges.

Directions:
Directions:
Mix cookies according to directions and add almond flavoring. Form into tsp. size balls and place in greased mini muffin tins. Bake at 350 degrees for 8-10 min. or until puffy in the middle. Immediately press down the center with a tart shaper (or large handle) when removed from the oven. Cool completely before removing from tin.

Combine pudding, cream cheese, and cool whip. Pipe into cooled cookie tarts and top with fresh fruit.

You can also use any cake mix with 2 eggs and 1/3 cup oil in place of the cookie mix.
May also be made with spice cake with pumpkin pudding and topped with whip cream. Chocolate cake with oreo pudding and crushed oreos on top is another option.

You'll get about 36 tarts out of each batch.
