Poached eggs (2 per serving)

Salsa

1 slice of artisan style whole wheat bread (I like the whole wheat from Costco but most artisan style bread works well.)

Directions:
Directions:
Toast bread (1 slice per serving)

Poach eggs (I use a microwave poacher I bought at Fred Meyer that works good for single servings. Traditional poaching works better for bigger groups)
(2) eggs per serving

Place poached eggs on toast and cover with salsa.

This was an invention I came up with to provide a lower calorie substitute to Eggs Benedict.
