1/2 cup flour
1/2 cup evaporated milk
1/8 tsp salt
4 eggs
1/4 cup butter

Directions:
Directions:
Combine first three ingredients-mix well. Add eggs one at a time, whipping with a wire whisk after each addition. Melt butter in a 10" pan. Add batter and place in a preheated 425 oven. Bake 15-20 min. or until puffy and golden brown.

Peach topping - Stir together about 2 Tbsp cornstarch with 1/2 c. white or brown sugar. Add juice from one large can or bottle of peaches. When thick, add sliced peaches and some cinnamon and mace, to taste. Serve over pancakes.
