4 slices crisp-fried bacon or bacon bits
1/2 lb. Swiss cheese, finely diced
3/4 c. grated Parmesan cheese
1 tbsp. chopped, fresh chives or 1 tsp. dried chives
1/8 tsp. nutmeg
4 eggs
2 c. light cream
salt and pepper if desired
2 unbaked pie shells (not deep dish)

Directions:
Directions:
Cover pie shells with Swiss cheese. Combine Parmesan, chives, nutmeg, and chopped bacon and spread over the cheese. Beat eggs; add seasonings and cream. Pour over mixture in pie shells. Bake at 350 for about 40 minutes until set and top is brown. Serve warm for breakfast, brunch, or dinner.
