1 cup sugar
cup water
cup (or more) heavy cream
1 tbsp. rum, optional (but delicious!)

Directions:
Directions:
Heat the sugar and water to a boil, stirring constantly, in a small saucepan over medium heat. After the mixture comes to a boil, stop stirring and cook until the syrup turns a rich amber color, about 8 minutes. The timing will depend on the size and weight of your pan. Remove the pan from the heat and stir in cup of cream all at once. Continue stirring until smooth and shiny. Stir in the rum, if using. For a mellower sauce, stir in an additional tablespoon or two of cream. Cool to room temperature. The sauce will keep indefinitely if refrigerated.
