4 large russet potatoes
1 tsp. salt
1 lb. ground beef
tsp. pepper
tsp. salt
4 oz. cream cheese
2 cloves garlic, minced
1 cup shredded cheddar cheese, DIVIDED
4 cups frozen mixed vegetables
1 1/2 cups beef gravy (made from dry gravy mix and water follow directions on container)

Peel potatoes. Cut into quarters and cover with water in small saucepan. Add 1 tsp. salt. Bring to a boil on high heat. Reduce heat and simmer for around 20 minutes or until fork tender. While potatoes are cooking, brown beef in skillet. Drain if necessary. Add salt, pepper, frozen vegetables and prepared gravy. When potatoes are tender, drain them and mash potatoes in mixer (whisk attachment). Add in cream cheese, minced garlic, and cup cheddar cheese to potatoes. In greased 8x8 pan, spread the beef and vegetable mixture. Cover with potato mixture. Sprinkle remaining cheese over top. Bake at 350 degrees for 30-40 minutes.
