4 c. Red Pie Cherries
1-1 1/2 c. Cherry Juice
1 c. Sugar
3-4 T. Cornstarch
1/2 tsp. Almond Extract
Few Drops Red Food Coloring

Directions:
Directions:
Place in a saucepan: cherries, juice, sugar, cornstarch and red food coloring. Bring to a boil while stirring constantly and boil until thickened. Remove from heat and add almond extract. Use as pie filling or for coffee cakes, etc.

When we picked cherries in Michigan, we had so many this was a good way to use some of them. Very reasonable compared to buying canned pie filling.
