Brown the beef with the mushrooms. In a large bowl, mix together soup, sherry, and soup mix until smooth. Put the beef and mushrooms in a large casserole dish or dutch oven and pour soup mix over it. Bake in over at 325º for 3 hours or at 300º for 4 hours. Beef should be fork tender when done.
This is excellent served over rice or egg noodles.
