4 pork chops
Salt, pepper, seasoning
4 Tbsp. butter
½ c. celery, chopped
½ c. onion, chopped
1 c. julienne sliced carrots or ¾ c. shredded carrots
1 box stuffing mix with herbs (6-8 oz)
1½ c. chicken broth

Directions:
Directions:
Season pork chops. Brown in olive oil 2-3 minutes each side. Remove chops to a plate. Add butter to the skillet and reduce heat to medium low. Add the celery, onion and carrots, sauté for about 3-5 minutes, until vegetables are tender. Add the stuffing mix and chicken broth. Stir until moistened. Spoon the mixture into a greased 7x11 or 9x13 pan. Top with pork chops. Cover pan tightly. Bake at 300 degrees for 2 hours. (Uncover for the last 15 minutes to brown the stuffing).
