Assorted greens, washed and drained thoroughly (greens should be dry)
1 Cucumber, sliced thinly
3-4 Green onions, sliced thinly
2-3 Celery stalks, sliced thinly
Cherry tomatoes
Fresh mushrooms, cleaned and sliced
3 Eggs, boiled and sliced
1 lb. Fresh medium size shrimp, peeled and deveined

Cook the shrimp in a package of shrimp/crab boil which can usually be found in the spice section of the store (I use McCormick Shrimp/Crab Boil). Follow the directions on the package. I usually do this part the day before.

I use a large glass bowl and layer the ingredients - greens, veggies, a few egg slices, shrimp. Keep layering until all the ingredients are used. Top with a few of the egg slices, a few shrimp and a few tomatoes. Serve with your favorite salad dressing.
