4 large baking potatoes
4 slices bacon cooked and crumbled
1 c sour cream
1/4 c chopped green onions
1 c shredded Colby-Jack cheese

Directions:
Directions:
Preheat oven 400

Bake potatoes until tender when tested with fork. Cool slightly. Cut potatoes lengthwise into quarters. Carefully scoop out potato pulp, leaving about 1/4 inch potato with skin intact.
Increase oven to 425. Combine bacon, sour cream, green onions and salt in a small bowl. Spoon mixture into potato skins. Top with cheese. Bake until cheese is melted. Serve warm
