1/3 cup chopped onion
2 cloves garlic minced (1tsp)
1 tbsp floor
13/4 cups half -and- half
2 packages (9 ounces frozen chopped Spinach well drained
1 can (8 ounce3s) sliced water chestnuts
1 package (1ounce) dry vegetable soup mix
1/4 c shredded Parmesan cheese

preheat oven 425
Melt butter in large sauce pan over med. heat. Add onion and garlic, cook and stir until onion is crisp. Stir in flour and cook for 1 minute. Add half-and -half stirring constantly until mixture thickens.
Remove from heat and stir in spinach, water chestnuts cheese and vegetable soup mix. Spoon into a 1 qt casserole. Sprinkle with Parmesan.
Bake dip until cheese is melted. Serve warm
